Microwave Monday

I’m thinking it will have to be one of those days.  I have not picked up a fresh round of veggies (the celery I did pick up froze) and I will be in and out all day.  Worst come to worst, I’ll stop by our cafeteria or the various cafes for a salad.

But, dinner is a different story.  I’m planning to go a meeting for Ogilvy&Mather and by the time it finishes, the salad bar will be shut, which leaves me to microwave meals?  I am not usually one to microwave food, let alone for full meals.  I like the idea of eating whole foods. Let me back up, that wasn’t meant to be snobbish.  I simply had far too many microwave meals back in the day, especially in 6th grade when we were remodeling our house and had no access to a stove or oven.  Lean Cuisine anyone?

I could have saved part of this DELICIOUS turkey burger from Yard House last night, but that didn’t happen.  It was 5oz of pure heaven.  They must have included some wide variety of spices because it was not nearly as dry or bland as most turkey burgers are.  Anyways, it doesn’t look to be too gourmet of a Monday for me 🙂

But, not to worry, the day won’t be too sour.  In fact, I have a sweet microwave treat for you!  Ever stumble upon the glorious idea of a “Microwave Brownie” or “Brownie for One” or “Brownie in a Mug”?  Well, these recipes practically DOMINATE Pinterest and various food blogs.  I was stuffed from dinner last night, but Hallie and Katie were dying to test this recipe out, so we made it happen.  Carpe diem, right? I have included two recipes, one straight from Hallie’s Pinterest, the other created by yours truly, a tad bit healthier version.

Ghiradelli Brownie in a Mug
1/4 cup sugar
1/4 cup flour
pinch salt
2 Tbsp Ghiradelli cocoa powder
2 Tbsp oil
3 Tbsp water
scoop Cool Whip (optional)

Mix dry ingredients in a mug.  Add in the oil and water and mix thoroughly.  Place in the microwave for about 1:30.  Let it cool for about 30 seconds, then place whipped topping (Cool Whip, etc) on top and enjoy. This will provide a dense and creamy treat, perfect for one or two (it’s surprisingly rich).

K’s Guilt-Free Microwave Brownie
1/8 cup sugar (I cringed at the thought of a 1/4 cup per serving)
1/4 cup wheat flour (next time I might sample my cake flour for a lighter result)
pinch salt
2 Tbsp Ghiradelli cocoa powder
2 Tbsp coconut oil
3 Tbsp water
scoop Cool Whip (optional)

Follow directions above 🙂

I found this results in a dessert very similar to a lava cake you would order at a restaurant.  Simply place a scoop of ice cream or whipped topping on top and you are good to go.  Much cheaper too 🙂

  1. All I can say is holy yum. All of this food looks SO good! I love microwave mug cakes… I find that they have a slightly denser consistency, but they are still delicious! Especially with a scoop of ice cream on top… clearly we know where my food priorities lie 😉 Have a great day!

  2. Sounds awesome. And whole wheat flour totally makes it healthy, right? 😉

    I do a lot of frozen burritos and microwaveable soup cups for easy lunches. I found a couple of organic, all-natural brands that I like, so I don’t feel so bad about eating them!
