How about some cookie butter to start the day? There is such thing as the breakfast cookie or Speculoos Baked Oatmeal. But that’s not where I’m going with this post. Sunday I said goodbye to Meghan and goodbye to my four-week long break. Yesterday marked the beginning of our winter quarter and I thought I’d celebrate with a cookie butter recipe. We had countless options from the internet (bars, biscottis, blondies, and snacking cake), but selected cookies. I mean, who doesn’t love the combination of butterscotch, chocolate, and oatmeal?
Speculoo’s Butterscotch Chocolate Chip Oatmeal Cookies
~20 or so cookies (depending on how little/much batter you consume)
Ingredients
1/2 cup butter (softened)
1 cup brown sugar
1/4 cup white sugar
1/3 cup cookie butter
1 egg
1 egg yolk
1 tsp vanilla
1 1/4 cups plain flour
1 cup rolled oats
1 tsp cornstarch
1/2 tsp baking soda
1/2 tsp salt
3/4 cup chocolate chips
1/4 cup butterscotch chips
Directions
1. Preheat the oven to 350 F. Using an electric mixer, cream the butter and both sugars until light and fluffy.
2. Add the cookie butter and beat until it is well incorporated. Beat in egg and vanilla.
3. Slowly add the flour, oats, cornstarch, baking soda and salt and mix until just combined.
4. Stir in the chocolate and butterscotch chips.
5. Divide into little balls of dough and place on the baking trays.
6. Bake for about 8-10 minutes or until the bottoms of the cookies are golden brown.
I know these are a little bit of a sugar overload, so I’ll be whipping up some healthier varieties this weekend. I plan to experiment again with applesauce and even dates. What’s your favorite cookie combination?

Yum! Oatmeal cookies are definitely one of my favorite cookies. How did you get them to turn out so round and even? My oatmeal cookies always seem to stay in tight ball shapes because they are so thick.

I tried two different cookie recipes from TwoPeasandtheirPod.com this holiday season and they were both SERIOUS winners! Both had white chocolate chips too…apparently I’m into that sort of thing 😀
