Another Wednesday has arrived. Let’s begin with this partay as many bloggers like to call it. I just call it a celebration of the fact that I can take pictures of my food without people staring. Ok, people still stare, but there is at least a reason for me whipping out the iPhone. I should probably count the number of food pictures that are actually on my phone. That would be hilarious.
Breakfast: Overnight oats with pineapple, frozen berries, almond milk, Greek yogurt, chia seeds, oats, and a walnut topper. Was feeling a bit peckish, so I broke into my snack pack at work. Coconut bread and sliced apple. Perfect combination. Maybe a little better if there was some peanut butter…A #lululunch (phenomenon started by Theresa) occurred in between classes and resulted in the following: carrots, broccoli, asparagus, tofu, salsa, and an iced coffee.
Dinner: These lovely dude ranch chips from my foodie pen pal last month, a choconut smoothie (see below), and some carrots. It was a whirlwind sort of day, so complete meals were not on the menu.
Choconut Smoothie (perfect for snack)
1/2 frozen banana
1/4 almond milk (vanilla tastes better)
1/2 cup Greek yogurt
1 tbsp ground flaxseed
1 tbsp coconut shreds
1 tbsp cocoa powder
optional: 1 tbsp almond butter
I did end the night with one of these delicious sunflower butter blondies. I had experimented with a recipe this weekend and let’s just say they were demolished within seconds of me opening the tupperware at chapter. Of course you will have to come back tomorrow for the fun reveal of these nut butter perfection of a recipe. 🙂
