Let’s Go Nuts

I’m sure you know where where this post is going … NUTS!   So, if you are NOT a nut lover, my apologies, you can delete this email, keep blog-hopping or go back to Facebook work.

Nuts.  I’m not 100% sure when the love affair began I do know that we had peanut butter toast (Jiff crunch to be exact) on all our vacations – pre-hiking or pre-skiing, down by the beach or boating in the middle of the lake.  Surprisingly I don’t think my mom packed me PB&J too often (yes, she was a doll and made my lunches) but I do recall pb + tortilla (and often chocolate chips) being my go-to after school snack.  So healthy, I know.

One thing led to another and I started to realize how many varieties of nut butters were out there!  Sunflower seed butter, almond butter, cashew butter, coconut butter, and pretty much any epic combination you could dream up.   I’m currently in the almond state of mind – almonds in my oats, almond butter in my fridge, and I’ve even got my eyes on some dark chocolate almonds for this weekend.  Where could you go wrong?

^^ My friend Marnie is an avid nut butter creator and makes THE.BEST.COMBINATIONS ever.  She even made me my own special mix (cashew butter w/ Baileys) for my birthday.  The jar (like many other jars) was finished in record time.

But, my true love is for sweets, so thank goodness there are endless ways to enjoy almonds – either on their own or mixed into my favorite recipes (more recipes with almonds to come soon-ish). Just don’t drool too much.

Tuesday Truths – A 2015 First

Truth is that life has been a bit crazy.  I may not nose-deep in homework and I’m not running a family, but there’s a lot of life-pondering right now.  I float between thinking about the future and living in the moment.  I balance my life and my interests against those of society.  I stream through social media to see what’s going on in the world and of course pair it against my own life.  Typical 20-year old right here.

Truth is…I’m studying book after book about fun places to explore in New York City.  I’m looking for ways to give back.  I’m looking for more ways to soak in the east coast charm.

Truth is…I don’t fill my nights with educational documentaries (except one on the Eagles band, which was AWESOME) or long novels, but rather college football (well until next year) and Netflix binges of “Heart of Dixie”.  Slightly obsessed.

Truth is…I don’t always like staring at the computer at all at the end of the day.   My type of work requires me to be glued to the screen and sadly that’s where our industry and generations are going.  So I have to thank posts like Nutty About Health’s that remind me to get up and MOVE!

Truth is…I miss blogging.  I miss the creative outlet and sharing the sights and sounds of the city.  I find myself dictating posts to myself as I run or walk to the gym.  I stumble upon an article or podcast and am hit with a wave of inspiration.  Now if I could extend the day by a few hours (and pretty much figure out how to become Superwoman)

Truth is…I do love my apartment, roommates, and location in the city.  We have finally decorated our apartment to feel like home away from home.  We usually have shows that we watch together and some nights we even make dinner together.  It’s sort of a different experience from college and is lots of fun.

Truth is…I’m proud of myself for running in 17F this last weekend.  It was my first long run/race in a long while and I felt strong.  Maybe it wasn’t a PR but hey, it was a personal best in such frigid temperatures.  Oh, and while I took a rare selfie with earbuds, my phone died five minutes into the 10k.

IMG_8003Let me introduce the full on dairy, gluten, meat lovers post-race breakfast.  Not to mention 4 or 5 cups of diner coffee. Goes against all diets out there but well worth it. 

Truth is…I think I might start an Etsy account.  I’m working my way I make my own personal photo cards and think it might be a neat outlet.  I’m not looking to make a profit (yet) but it would be a neat outlet and good business experience.

Truth is…life isn’t that bad so get out there and seize the day!

Meal Plans with Food & Phood

Welcome to Wednesday, or Hump Day for those so inclined.  My grandpa is actually pretty nice about sending a text message when he wakes up (around the 4:15am mark), wishing us a happy hump day.  I’m still living off last weekend’s adventures with my sister and reminiscing the delicious food we had.

So, being a foodie, I’m all about trying new spots and the hottest dishes (as long as nothing stares back at me) but my confession to you would be that I rarely do try these fab-looking restaurants and tasty dishes.  I talk the talk but end up with a plate of grilled veggies back at mi casa. Sometimes when I do go out, I end up ordering what I think I should order instead of what I really want.  Mistake.  Anyways, this week has been a bit of a routine affair – packing meals and attempting to save money so that I can splurge when Sarah arrives to roam the city this weekend!

A week or so ago I was contacted by PlantFusion about their new simple, easy, and delicious protein powders.  In its own words, “PlantFusion combines 4 of the world’s most potent plant protein sources, fortified with key amino acids and digestive enzymes to create an uncompromising fusion of taste, potency, and digestability all in one.”  Now that sounds pretty legit to me, doesn’t it?

I was quite intrigued by the idea of their and offered to test them out.  In fact, I had been considering protein powders or breakfast combinations like Carnation Instant Breakfast (something I used to drink way back in the day), so this was perfect timing.  Chocolate was by far my favorite, probably because of my childhood all-time love for chocolate milk.

Flavors – Chocolate, Vanilla, unflavored, Cookies & Cream, Chocolate Raspberry

Usually I choose to drink the powder with unsweetened almond milk, lowfat milk, or even a little water. Sadly my work schedule doesn’t allow me to use the blender in the morning but I’m looking forward to the weekend when I can throw one of these in with ice cubes and a frozen banana or maybe some greek yogurt for an even more filling breakfast or post-workout snack.

  • Lunch – salad (lettuce/chicken) with dipping sauces of course, carrots, and chicken broth
  • Snack #1 – apple
  • Snack #2 – KIND Peanut Butter & Dark Chocolate bar
  • Dinner – leftover lo mein, which sadly was NOT as good as it was on Sunday.  Guess I’m just not the leftover type of gal.
  • Dessert – Death by See’s Candy.  (Juuuust kidding mom 🙂 )  But I did realize that not eating enough protein during the day lead to a hungry and semi-stressed Kaitlin … therefore inhaling chocolate + milk seemed logical.

I was planning to attend a spin class after work but ended up meeting with one of my Santa Clara boss’s friends.  We were in a fancy bar but I ended up  with a nice club soda + cranberry as I’m testing out the Dry January.

Also, as of Tuesday, I’m going to try to wean myself off sauce (believe me, I eat more than is humanely possible of ketchup + BBQ sauce + ranch) and some types of sugar.  Not really jazzed about how it’s affecting my energy and acne, so it’s worth a shot.  I know everything is about moderation, so let’s call this the “Month for Moderation”.  At least I’ll try to hold myself accountable now that I’ve shared it across the world wide web.
